"I've always just loved eating," says Hartford House Head Chef Constantijn Hahndiek.
Born and raised in Cape Town, the city that boasts the hierarchy of top ten restaurants, Constantijn now finds himself nestled in what must be one of Earth's most beautiful valleys. His mother was his first motivator for cooking good food. "My mother was an excellent home cook and she taught me to do the basics really well."
These basics have brought a fresh, new dynamic to the legendary Hartford House kitchen. Constantijn firmly believes that the Zulu Kingdom has huge potential to grow within the food industry. With the emerging 'market scene' in Durban and outer lying areas, and of course the local pantry of produce available right here on our doorstep in the KZN Midlands, we have real potential to create extremely special food in KwaZulu-Natal.
"We are constantly learning and experimenting. For myself and the Hartford kitchen team it's not about finding a recipe and sticking to it, but rather about continually evolving and changing things up. We just need to remember that ingredients are key and so to try and source our ingredients locally wherever possible is what will make the difference. We only get one chance at this life but if we do it right, once is enough!"
