What is currently in your fridge at home?
An assortment of toasted sandwich fillings, from curried chillies to slabs of cheese. I don’t have time to cook big at home.
The most annoying eaters?
No eater is annoying — we try to accommodate everyone — but well-done anything is a shame.
Dumbest thing you have ever done in a kitchen?
Oh there are plenty. Getting my salt and sugar pots mixed up means a salty crème brûlée that won’t brûlée, or a very sweet steak.
Who do you dream of cooking for and what would you make them?
I would love to cook for someone like Anthony Bourdain. We try to tell a story with our food and in the culinary world he’s one of the best storytellers.
A piece of food-related travel advice.
Try everything unusual and new and make it part of the experience; find restaurants with locals in them; ask about the culture behind the dish — you’ll learn a lot about the people by what they cook.
Worst diet you’ve ever tried?
Hahaha. Diet is not in my vocabulary. I have tried to lay off coffee, but then I get grumpy.
I’m a sucker for a good milkshake.
What dish would you never try to master or have never been able to master?
I’ve never tried my hand much at making cheese. It’s a patience game and an expensive one if it goes wrong.
If you could eat only one food or dish for the rest of your life what would it be?
A good, simple pasta dish.
What food item would never be seen in your house?
What food are you currently craving?
A warm, moreish winter stew (the weather’s freezing).
The oddest food request you’ve had?
Pancakes with scrambled egg inside them was a new one.
