What an amazing review... so proud!
Dear Tijn and Duncan,
We had a marvelous time this last week at Hartford. Tijn, we wanted to tell you that in all the years of visiting the hotel, your food is by far the best ever. (We have been through a few chefs at the hotel.) Your kitchen garden is an obvious feature in your cooking and makes everyone happy, as you know.
Working backwards from our last 5 course dinner, we were all agreed at the table that it was outright, the most exquisite meal. Plate after plate was beautiful to behold and then all your carefully considered flavours, each one of them a profoundly different and surprising experience. You are an artist at sculpting a plate-scape and then to destroy it by eating it, the ultimate deconstruction, is a guilty pleasure.
Stallion Day has never been so beautiful and your food was sublime, all of it. I told Mick and Cheryl that it was the most exquisite and elegant affair and your generous and varied offerings of bowls of little meals, added immeasurably to the day. When Cheryl conceived of the “Tea House” in her mind, I do think this is exactly the kind of fare and presentation that she dreamed of having.
Tijn you deserve to win every prize and accolade as we are sure you will, time and time again.
Thank you for all your concentration on making us happy, right down to a bowl of chips and my piece of chicken!
