"I am learning and am determined to thrive in this kitchen"

Jessica joined Hartford House in January 2013 to complete her 6 month work experience with us. She is currently studying a Grande Diploma in Culinary Studies & Wine through Prue Leith Chefs Academy. When asked why she wanted to do her work experience at Hartford House, this was her response:

"It was not a hard decision. Being in a kitchen that caters to a few guests means that there is more time to put heart and thought into every element of each plate. Being in the middle of the beautiful mountains and open spaces, as well as being based on the prestigious Summerhill Stud farm is an added bonus. Being able to work with Chef Jackie Cameron is truly an once in a life-time opportunity."

Jessica was asked what makes her drive to work in the Midlands different from her previous drive to Prue Leith?

"Besides the physical beauty of the route to work, I know that when I get to work endless possibilities wait; no day is the same and there are always new ideas, techniques and dishes to try. Working in such a small environment allows your work day to be very interactive."

When Jessica was asked to name her favourite dishes are at Hartford, this was her response:

"Having a particular passion for pastry, I am intrigued by every desert that leaves the kitchen, and with Chef Jackie changing menus every night there is always a new dish to see. Along with that, I favour the Springbok starter because it amazes me how every element on the dish is unique to it, even down to the Black Lava Salt. Between the a la carte lunch menu, detailed dinner dishes and carefully planned breakfast items, it is truly hard to pick just one."

Lastly, we asked Jessica what phrases we would most likely hear her say in the kitchen?

"Honestly, coming into the kitchen you will most likely hear me asking where to put something or about the plating. In a single day I have been involved in breakfast, lunch, afternoon tea and dinner, so it is a lot to take in but I am learning and am determined to thrive in this kitchen."

"Local is Lekker"

Adri joined Hartford House in December 2012 to complete her 6 month work experience with us. She is currently studying hospitality through Central University of Technology. When asked why she wanted to work at Hartford House, this was her response:

"I was excited when I was chosen for Hartford House. The first thing that attracted me to Hartford House was its award winning kitchen and to work and train under chef Jackie Cameron. I have a passion for food and cooking, so I am looking forward to my 3 months in the kitchen."

Adri was asked what makes her new drive to work different from her previous commute to varsity in Bloemfontein?

"It's different driving to work, because there is a different level of responsibility that is expected from me with different challenges facing me daily."

When we asked Adri what her favourite dishes where, this was her response:

"Butter-poached Prawns, With 'Esposito' Ham Espuma, Exotic Mushrooms, Orange Marmalade and Beurre Blanc... the Beurre Blanc is drizzled over the plate by the manager-on-duty and this makes the guest feel apart of the experience"

 Lastly we asked Adri what we will most likely hear her say?

"I am a true supporter of 'Local is Lekker' so I am sure you will hear that from me, especially with Jackie's passion for local ingredients"

"Mistakes equip one with the knowledge that can only be learnt in the work place."

Nikita joined Hartford House in December 2012 to complete her 6 month work experience with us. She is currently studying hospitality through Central University of Technology. When asked why she chose Hartford House, this was her response:

"I was lucky to be accepted at Hartford House, they have high standards and wonderful staff, and if you don't believe me, come and experience it for yourself. It has become quite an adventure in the Midlands and truly an experience of a lifetime. While I am at Hartford I am working both in the Kitchen and Restaurant, which has just been voted in the top 10 in South Africa. The food here is so different, which sets it so far apart from others, everything has a unique way of being plated. There is so much to learn and see. I am looking forward to it."

Nikita was asked what makes her drive to work different from her previous Bloemfontein commute?

"It is less than 10 minutes. The scenery and the horses on the drive in makes it feel as though I am in another world."

When Nikita was asked what some of her favourite dishes are at Hartford, this was her response:

"Chocolate Fondant - I am a girl and I love chocolate... Beetroot Powder topped Lokum with ash coated Lemon Verbena Panna cotta, with Rose Geranium Ice Cream and Lavender Sherbet. - I know it sounds like a mouth full, but I never thought of beetroot in a dessert - and it is truly delicious."

Lastly we asked Nikita what we will most likely hear her say?

"I am so scared that I'll make a mistake... but I have learnt now from the Hartford Managers and staff, that mistakes equip one with the knowledge that can only be learnt in the work place - hands on."
