Kezia Duke was my Sous Chef at Hartford, second in charge, for over two years, a true perfectionist. One just has to look at her handwriting to know exactly what she is about. Last weekend we celebrated her hen’s/kitchen tea, and can you believe, after working with me that long, she still wants me to be her maid-of-honour! I do feel honoured. She sent through a recipe for a quick-and-easy bacon and courgette crustless savoury tart; wonderful for its simplicity. Use any of your favourite ingredients to make it your own.

This recipe is great because you can use any of your favourite ingredients to make it your own.

Serves : 4

Preparation : 15 mins

Cooking : 20 mins

Ingredients :

  • 80g Onions
  • 50g Green Pepper
  • 160g Courgettes
  • 50g Mushrooms
  • 160g Bacon
  • 5 Eggs
  • 1/4cup milk
  • 10ml garlic
  • 10ml cornflour / potato flour
  • 20g butter
  • 10ml sugar
  • Ina Parmen's Rosemary and olive spice
  • Salt and Pepper
  • Cheddar Cheese

Method :

  1. Pre heat oven 230°C.
  2. Heat pan and add butter. Caramelize onions with sugar, add peppers and garlic.
  3. Add bacon and season. Add courgettes and mushrooms.
  4. Add mixture to greased oven dish.
  5. Beat eggs with milk and cornflour and pour into mixture.
  6. Grate cheese over the top and bake in oven.
  7. Serve with side salad.
