For wine lovers I suggest something a little unusual. red-wine poached oranges with Midlands’ fresh lavender is simply scrumptuous. The longer the oranges marinate the more distinct the red-wine flavor. Serve with a dollop of mascarpone or crème fraiche. It’s so easy to make, yet impressive on the eye and to the taste buds.

Serves : 4

Ingredients :

  • 400ml Red Wine
  • 100gr Treacle Sugar
  • 5gr Fresh Lavender
  • 5ml Almond Essence
  • 4 (1185gr) Oranges, skin off and cut in diagonal slices, 535gr

Method :

  1. Place the red wine, sugar, lavender and almond essence in a medium sized saucepan.
  2. Stir until the sugar has dissolved and bring to a boil, turn down the heat to a simmer.
  3. Add the orange slices and allow to poach for 5 minutes.

Serve with:

  • 40ml Mascarpone Cheese
  • 35gr Flaked Almonds, roasted
  • 1 sprig Fresh Mint, julienne
  • Optional: Chunks of White Belgium Chocolate
