Red Wine Poached Pears
Yields : 4 Portions
250ml freshly squeezed Orange Juice
250ml Red Wine
1 Lemon, cut in ¼
1 Orange, cut in ¼
4 Pears, peeled, de – cored and cut in 1/2
2 Star Anise
125ml White Sugar
2 Bay Leaves
1) Place all the ingredients into one pot.
2) Bring to the boil, then simmer for about 20 minutes or until cooked. Leave the pears in the syrup for a few days to develop the colour and flavour within the pear.
3) Serve with Gorgonzola Cream, roasted Walnuts and Honey.
