Salted Butter Caramels
Yields : 2 trays (16cm x 20.5cm x 3cm)
- 1kg sugar
- 150g glucose
- 800g salted butter
- 500ml cream
- In a pot, melt the sugar, glucose and butter.
- Once all the crystals have dissolved, add the cream and bring till 122˚C.
- Line a meat tray with baking paper.
